Mixed Fruit Medley
Prep: 10 min.
  • 4 lbs. honeydew melon, cut into bite size chunks
  • 1 papaya, peeled, seeded and cut into bite size chunks
  • 1 pear, peeled, cored, and cut into bite size chunks
  • 1 cup blueberries
  • 3 Tbs. plus 1 tsp. lemon juice
  • 1/2 tsp. salt (optional)
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 1/2 cup low calorie mayonnaise

Combine melon, papaya, pear and blueberries in a salad bowl. Combine remaining ingredients in a blender or food processor and process until smooth. Pour dressing over fruit and toss.
