Spinach Salad with Mustard Walnut Dressing

- 4 cups spinach leaves, torn
- 1 cup mushrooms, sliced
- 1 cup cherry tomatoes, cut in half
- 1 cup walnuts, chopped
- 2 Tbs. olive oil
- 1 Tbs. plus 1 tsp. red wine vinegar
- 1 Tbs. plus 1 tsp. mustard
- 2 cloves garlic, crushed
- 1/4 tsp. salt (optional)
- 1 cup cheese & garlic croutons
Combine spinach, mushrooms and tomatoes in a salad bowl. Combine remaining ingredients, except croutons, in a bowl. Whisk vigorously. Pour over spinach and toss with croutons.
