Beef and Snow Pea Stir-Fry
Prep: 10 min, Cook: 15 min.
  • 1 Tbs. plus 1 tsp. oil
  • 1 lb. lean beef strips
  • 1/4 cup curry paste, or green curry paste
  • 2 cups coconut cream
  • 2-3/4 Tbs. Thai fish sauce, optional
  • 7 ounces snow peas, topped and tailed
  • 1 Tbs. plus 1 tsp. basil
  • 2 green chillies, sliced, optional

Heat oil, stir fry steak until brown, about 7 to 10 minutes. Add curry paste and cook, stirring, for 2 minutes. Add coconut cream, fish sauce and snow peas, bring to the boil and simmer for 5 minutes. Add basil and chillies just before serving. Serve with steamed rice.
