Mixed Salad with Sweet Vinaigrette
Prep: 15 min.
  • 2 cups Romaine lettuce, torn
  • 2 cups spinach leaves, washed and torn into pieces, tough stems discarded
  • 1/2 cup mushrooms, sliced
  • 1/2 green bell pepper, seeded and cut into 1 inch pieces
  • 1 Tbs. plus 1 tsp. olive oil
  • 1 clove garlic, crushed
  • 1 Tbs. plus 1 tsp. white wine vinegar
  • 1/2 tsp. basil, or 1 Tbs. fresh, minced
  • 1 tsp. Dijon mustard
  • 1 tsp. lemon juice
  • 1/2 tsp. sugar
  • 1/8 tsp. salt (optional)

Combine first 4 ingredients in a salad bowl. Combine remaining ingredients and pepper to taste in a jar with a tight-fitting lid. Shake vigorously. Pour dressing over salad and toss.
