Impossible French Apple Pie
Prep: 20 min, Cook: 55 min.
  • 4-1/3 cups Jonathan or Granny Smith apples, peeled and sliced
  • 1-1/4 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 3/4 cup milk
  • 2 Tbs. unsalted butter, softened
  • 2 eggs
  • 1 cup sugar
  • 1-1/2 cups buttermilk baking mix
  • 1/2 cup chopped nuts
  • 1/3 cup brown sugar, packed
  • 3 Tbs. unsalted butter, firm

Preheat oven to 325°F. Combine apples and spices in a bowl. Turn into a greased 10 inch pie plate. Combine milk, softened butter, eggs, sugar and 1/2 cup baking mix in a bowl. Beat until smooth, 15 seconds in blender on high or 1 minute with hand beater.

Pour into plate. Combine 1 cup baking mix, nuts, brown sugar and firm butter in a bowl until crumbly. Sprinkle on pie. Bake 55-65 minutes, or until a knife inserted in center comes out clean. Cool.
