Preheat oven to 350°F. Layer spinach, scallions, and cottage cheese in a greased 9 inch or 10 inch pie plate or baking dish. Combine remaining ingredients in a food processor or blender. Season with salt and pepper to taste. Blend until smooth and pour mixture over layers. Bake 35-40 minutes, or until a knife inserted in center comes out clean. This recipe serves 4 people.
