Oven Chicken Parmigiana
Prep: 10 min, Cook: 1:00.
  • 1/2 cup buttermilk baking mix
  • 1/3 cup grated Parmesan cheese
  • 3/4 tsp. paprika
  • 2 lbs. frying chickens, cut up
  • 1/4 cup plus 3 Tbs. evaporated milk
  • 2 Tbs. plus 2 tsp. unsalted butter, melted

Preheat oven to 350°F. Combine first 3 ingredients in a bowl. Dip chicken into evaporated milk, then coat with cheese mixture. Place skin sides up in an ungreased baking pan. Drizzle with butter. Bake about 1 hour, until cooked throughout.
