Banana Streusel Coffee Cake
Prep: 15 min, Cook: 20 min.
  • 1/2 cup chopped nuts
  • 2/3 cup plus 4 Tbs. sugar
  • 1/2 tsp. ground cinnamon
  • 2 cups buttermilk baking mix
  • 1 cup bananas, mashed
  • 1/4 cup milk
  • 3 Tbs. unsalted butter, softened
  • 1 tsp. vanilla extract
  • 2 eggs

Preheat oven to 350°F. Prepare streusel topping: Combine nuts, 1/2 cup sugar and cinnamon in a bowl. Set aside. Combine remaining sugar and remaining ingredients in a bowl and beat vigorously 30 seconds. Spread in a greased and floured 9 inch square pan. Sprinkle with streusel topping. Bake 20-25 minutes, or until a wooden toothpick inserted in center comes out clean. Serve warm or cool.
