Smoked Turkey Casserole
Prep: 10 min, Cook: 25 min.
  • 3/4 lb. smoked turkey sausage, cut into 3/4 inch pieces
  • 1/2 cup reduced fat mayonnaise
  • 1/2 cup plain nonfat yogurt
  • 1 cup salsa
  • 1 lb. canned black beans, rinsed and drained
  • 1/4 cup Spanish olives, sliced
  • 1/4 cup scallions, chopped
  • 5 ounces tortilla chips, coarsely broken
  • 1/2 lb. cheddar cheese, shredded

Preheat oven to 350°F. Combine first 7 ingredients in a bowl. Mix thoroughly. Place half the mixture in the bottom of a casserole dish. Top with half the tortilla chips and half the cheese. Repeat with remaining ingredients. Bake 25 minutes or until bubbly and cheese is melted.
