Mandelbrot
Prep: 15 min, Cook: 40 min.
  • 3 cups all purpose flour
  • 1 Tbs. baking powder
  • 1/4 tsp. salt (necessary)
  • 4 eggs
  • 1-1/2 cups sugar
  • 1/2 cup vegetable oil
  • 1/2 tsp. almond extract
  • 1 tsp. vanilla extract
  • 1 Tbs. orange or lemon peel, grated
  • 1 cup whole almonds, blanched and toasted

Preheat oven to 350°F. Sift together first 3 ingredients in a bowl. Beat eggs and sugar in a separate bowl until mixture is thick and pale. Add oil and extracts. Beat in dry ingredients and citrus peel. Fold in almonds. Add more flour if dough is too sticky to work with.

Shape dough into 4 logs, about 2 inchesin diameter. Place on greased cookie sheets or jellyroll pans and bake 30-45 minutes until light brown.

Remove the logs and cut each one into 1/2 inch slices. Put slices back on the cookie sheets, cut side down. Toast in the oven 5 minutes. Turn each slice and toast 5 minutes more. Cool on a rack and store in an airtight container.
