Cold Beet Borscht
Prep: 15 min, Cook: 25 min, plus chilling time.
  • 2 lbs. beets, washed and trimmed
  • 1 Tbs. lemon juice
  • 2 tsp. sugar* (optional), to taste
  • 1 cucumber, peeled and chopped
  • 1/4 cup sour cream

Cover beets in a large saucepan with lightly salted water. Bring to a boil. Reduce heat to low and simmer 25-35 minutes or until tender, uncovered. Remove beets from liquid and place in cold water to cool. Rub off the outer skin and trim away any remaining pieces of root and stem. Grate beets and return to cooking liquid. Chill. Stir in lemon juice and sugar, if using, just before serving. Garnish with cucumber. Serve chilled with sour cream.
