Rice Kugel
Prep: 15 min, Cook: 35 min.
  • 1-1/2 cups white rice, uncooked
  • 1 gallon boiling water, lightly salted
  • 2 Tbs. margarine, melted
  • 6 eggs
  • 1/2 cup brown sugar
  • 1/2 cup raisins
  • 2 cups Jonathan or Macintosh apples, peeled and minced

Preheat oven to 350°F. Cook rice 15-18 minutes in lightly salted boiling water, until very tender. Drain well.

Lightly grease the inside of a 2-quart charlotte mold or baking dish with some margarine. Beat eggs and brown sugar in a large mixing bowl about 5 minutes, until mixture is light beige in color and is 4-5 times its original volume. Stir in rice, raisins, apples and remaining melted margarine.

Press into prepared baking dish and bake 20-30 minutes, until pudding is firm and top is golden. Cool to room temperature before serving or refrigerate and serve cold.
