Gourmet Tabbouleh Salad
Prep: 15 min, Marinate: 45 min, plus chilling time.
- 1/3 cup bulgur
- 1/3 cup pine nuts
- 4 cups water
- 2 cloves garlic (optional)
- 1/4 cup lemon juice
- 1/4 tsp. cayenne (optional)
- 1/4 cup plus 1 Tbs. olive oil
- 4 scallions, minced
- 2 large tomatoes, seeded and chopped
- 1 cup fresh Italian parsley, chopped
- 1/2 cup fresh mint, chopped
Place bulgur and pine nuts in water. Soak 45 minutes. Drain off excess water. Combine next 5 ingredients and sea salt to taste in a jar with a tight-fitting lid. Shake vigorously. Combine bulgur mixture and remaining ingredients with the dressing and chill.
