Thai Shrimp Salad with Papaya
Prep: 15 min, plus chilling time.
  • 2 Tbs. tamari
  • 3 Tbs. lime juice
  • 2 Tbs. honey
  • 1 Tbs. fresh ginger, grated
  • 1/2 tsp. hot pepper sauce
  • 1 lb. cooked and peeled shrimp
  • 2 ripe papayas, cubed
  • 1/2 cucumber, sliced
  • 3/4 cup pine nuts
  • 1 green bell pepper, seeded and chopped
  • 3 scallions, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 bunch spinach, stemmed

Combine first 5 ingredients in a jar with a tight-fitting lid. Chill while preparing other ingredients. Combine remaining ingredients, except spinach, in a bowl. Shake dressing and drizzle over shrimp mixture. Serve on a bed of spinach.
