Refried Beans

- 3 Tbs. canola oil
- 1-1/2 cups onion, chopped
- 1/2 cup green bell pepper, seeded and minced
- 1/4 tsp. black pepper
- 1/4 tsp. coriander
- 3 cloves garlic, crushed
- 2 tsp. ground cumin
- 3 cups canned pinto beans
Heat oil in a heavy nonstick skillet over medium high heat. Sauté onions, green pepper and spices 4-5 minutes until onion is softened. Stir in beans. Cover, remove from heat and allow to heat through. Put back on heat, stir and add sea salt to taste. Adjust seasonings and serve.
