Sicilian Bean Salad
Prep: 15 min, plus chilling time.
- 1 lb. canned white beans
- 3/4 cup artichoke hearts in water, drained and chopped
- 1/2 cup red onion, diced
- 1/2 cup oil-packed sun-dried tomatoes, drained and minced
- 1 green bell pepper, seeded and chopped
- 1/2 cup black olives, sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh Italian parsley, chopped
- 2 hard-cooked eggs, chopped
- 1/2 cup bottled balsamic vinaigrette dressing
- 2 cups organic salad greens mix
Combine all ingredients, except dressing and salad greens, in a bowl. Moisten with dressing and chill before serving on salad greens.
