Savory Three Bean Salad
Prep: 10 min, plus chilling time.
- 4 cloves garlic, minced or pressed
- 1/3 cup red wine vinegar
- 1/3 cup extra virgin olive oil
- 11 ounces canned garbanzo beans
- 11 ounces canned kidney beans
- 1-1/3 cups fresh green beans, steamed and cut in half
- 2 Tbs. plus 2 tsp. fresh Italian parsley, chopped
- 1 Tbs. plus 1 tsp. fresh sage, minced
- 3/4 green bell pepper, seeded and chopped
- 2 Tbs. plus 2 tsp. fresh cilantro, chopped
Combine first 3 ingredients in a jar with a tight-fitting lid. Season with sea salt to taste. Shake vigorously. Combine remaining ingredients in a bowl. Shake dressing and pour over salad. Chill before serving.
