Miso White Bean Sauce
Prep: 15 min, Cook: 5 min.
  • 1-1/3 cups canned white beans
  • 1/4 cup garlic, crushed
  • 1/2 cup muji miso
  • 1/2 cup basil leaves, chopped
  • 1 cup scallions, chopped
  • 2/3 cup water or vegetable stock
  • 1-1/2 cups soy milk
  • 2 pieces kudzu

Combine first 3 ingredients in a blender or food processor and purée until smooth. If using a blender, add water to facilitate the process. Add basil, scallions, soy milk and freshly ground black pepper to taste. Blend. Transfer to a saucepan and stir in kudzu and water (if it was not added while puréeing). Heat briefly to thicken, but do not boil. Serve over rice, millet, quinoa, or pasta.
