Gingery Cilantro Salad Dressing

- 2 ounces soft tofu, drained
- 1 tsp. honey
- 2 tsp. pickled ginger juice
- 2 Tbs. plus 2 tsp. orange juice
- 1/4 tsp. toasted sesame oil
- 1 Tbs. plus 1 tsp. Brewer's yeast
- 1 Tbs. pickled ginger, chopped
- 1 Tbs. cilantro, minced
Beat tofu in a food processor or blender, or with a whisk, until very smooth. Add remaining ingredients in the order listed, beating well after each addition. Use immediately, or cover and refrigerate for up to 5 days.
