Honey Almond Milk

- 1/2 cup almonds, blanched if desired
- 4 cups milk
- 1/2 tsp. ground cardamom
- 1/4 cup plus 2 Tbs. mild honey
- 1/4 tsp. vanilla extract
Process almonds in a blender or food processor until very finely chopped. Add 2 cups milk and process until mixture is very smooth. Transfer almond mixture to a heavy saucepan. Add remaining milk. Bring to a boil over medium high heat, whisking constantly. Remove from heat. Stir in cardamom. Return pan to heat, bring to a boil. Remove from heat. Stir in honey. Bring mixture to just under boiling point. Stir in vanilla. Strain mixture through a sieve. Serve warm.
