Apricot Couscous
Prep: 10 min, Cook: 10 min.
- 1 cup orange juice
- 1 cup water
- 12 dried apricot halves, cut into thin strips
- 1/4 tsp. salt
- 1 cup couscous
- 2 cups light cream
Combine first 4 ingredients in a heavy saucepan and bring to a boil. Stir in couscous. Cover pan, remove from heat and set aside 5-7 minutes or until all liquid is absorbed. Serve with light cream.
