Cornmeal, Cheese and Apple Fritters
Prep: 15 min, Cook: 10 min.
  • 1-1/4 cups all purpose flour
  • 3 cups cornmeal
  • 3 Tbs. sugar
  • 2-1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup buttermilk
  • 2 eggs, beaten
  • 1/4 cup plus 2 Tbs. unsalted butter, melted
  • 1 cup cheddar cheese, finely diced
  • 1 apple, cored and finely diced
  • 2 cups vegetable oil, for deep frying

Combine first 5 ingredients in a bowl. Stir in buttermilk, eggs and melted butter until mixed thoroughly. Stir in cheese and apples and set aside. Heat 1/2 inch oil in a heavy skillet or deep fryer to 375°F. Carefully spoon batter by 1/3 cup measure into oil. Do not overcrowd. Cook 6-7 minutes, turning occasionally until golden brown.

Drain fritters on a plate lined with paper towels.
