Fruit Pizza

- 1 cup ricotta cheese, or large curd cottage cheese
- 2 Tbs. honey
- 1/2 tsp. vanilla extract
- 2 Tbs. unsalted butter
- 1/3 cup raisins, coarsely chopped
- 4 lbs. pears, peeled, cored and thinly sliced
- 2 Tbs. lemon juice
- 1/4 cup brown sugar
- 4 small flour tortillas
- 1 Tbs. plus 1 tsp. sugar
Preheat oven to 450°F. Combine ricotta cheese, honey and vanilla in a food processor or blender. Process until very smooth. Set aside. Melt butter in a heavy nonstick skillet over medium high heat. Cook raisins and pears about 5 minutes, stirring frequently. Stir in lemon juice and brown sugar. Cook about 5 minutes, stirring frequently, until sugar begins to caramelize. Remove from heat. Arrange tortillas on a cookie sheet. Leaving a 1/2 inch border around tortilla, spread pear topping over tortilla. Sprinkle each pizza with 1 tsp. sugar. Bake about 10 minutes or until tortilla is lightly browned. Serve fruit pizzas with a dollop of sweetened ricotta cheese.
