English Muffin with Lemon Mayonnaise
Prep: 10 min.
  • 1/2 cup mayonnaise
  • 1 Tbs. lemon zest, minced
  • 1-1/2 tsp. capers, drained and chopped
  • 2 Tbs. pimentos, chopped
  • 4 English muffins, split and toasted

Combine first 4 ingredients in a bowl and mix thoroughly. Spread lemon mayonnaise over toasted English muffins. Cut muffins in half before serving.
