Quincy's Italian Sauce
From The Cop Cookbook by Greta Garner-Hewitt, Ken Beck and Jim Clark
Prep: 10 min, Cook: 2:00.
  • 8 cloves garlic, smashed
  • 1/3 cup olive oil
  • 1/4 lb. pork butts
  • 1-1/2 lbs. mixed sweet and hot Italian sausages
  • 1/4 lb. boneless beef for stew, to help cut the pork
  • 4-3/4 cups canned crushed tomatoes
  • 6 ounces tomato paste
  • fresh basil
  • fresh oregano
  • fresh parsley
  • salt and pepper

In a skillet, brown the garlic in the oil. Then brown the meats. Put in the tomatoes and tomato paste and bring to a boil. Add the basil, oregano, parsley, and salt and pepper to taste. Simmer for 2 hours, stirring often and adding more herbs to adjust the taste. By Jack Klugman.
