Inspector Henderson's Eggs Florentine
From The Cop Cookbook by Greta Garner-Hewitt, Ken Beck and Jim Clark
Prep: 10 min, Cook: 15 min.
  • 2 lbs. fresh spinach, cooked, drained and chopped
  • 2 Tbs. lemon juice
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced and sautéed with onion in a small amount of olive oil
  • 1/2 cup grated Parmesan or cheddar cheese
  • 6 eggs

Preheat oven to 350°F. Season the spinach with the lemon juice. Combine with sautéed onion and garlic, and transfer to oiled individual ramekins. Sprinkle cheese over the spinach mixture and, using the back of a spoon, make a 1 inch deep well in each. Crack and drop one raw egg into each well and bake until the eggs are set, about 8 minutes.
