Tomatillo Sauce

  • 1-1/2 lbs. tomatillos
  • 1/2 medium onion, chopped
  • 1 clove garlic, crushed
  • 1/2 Serrano chili, minced
  • 3 Tbs. cilantro, finely chopped
  • vegetable cooking spray
  • 1 Tbs. sugar
  • salt and white pepper

Remove and discard husks from tomatillos. Simmer, covered, in 1 inch of water in large saucepan until tender, 5-8 minutes. Cool; drain. Process tomatillos, onion, garlic, serrano chili, and cilantro in food processor or blender, using pulse technique, until almost smooth. Spray large skillet with cooking spray; heat over medium heat until hot. Add sauce and `fry' over medium heat until slightly thickened, about 5 minutes. Season to taste with sugar, salt, and pepper.
