Mediterranean Grilled Lamb

  • 3-1/2 Tbs. red onion, minced
  • 1 Tbs. plus 1 tsp. olive oil
  • 2 Tbs. plus 2 tsp. balsamic vinegar
  • 2 cloves garlic, crushed
  • 2 tsp. fresh basil, minced
  • salt and pepper
  • 4 lamb chops, about 6 ounces each

Combine all ingredients except lamb chops, then add the lamb chops and marinate in the refrigerator at least 3-5 hours. Grill or broil the lamb chops until done as desired.
