Chicken Salad Sandwiches
Prep: 10 min.
  • 10 ounces canned chunk chicken, drained
  • 1/2 cup celery, chopped
  • 1/4 cup plus 2 Tbs. mayonnaise
  • 2 Tbs. onions, finely chopped
  • 2 tsp. lemon juice
  • 8 slices bread
  • 4 lettuce leaves
  • 8 slices tomato

Combine first 4 ingredients and salt and pepper to taste in a bowl. Divide chicken mixture between 4 bread slices. Top with lettuce, tomato and remaining bread slices.
