Spicy Bean Salad
Prep: 10 min, plus refrigeration time.
  • 1/2 lb. canned pinto beans, drained, rinsed
  • 1/2 lb. canned butter beans, drained, rinsed
  • 7 ounces canned cut green beans, drained
  • 1/4 cup red onion, coarsely chopped or sliced and separated into rings
  • 2 Tbs. vinegar
  • 1 Tbs. olive oil
  • 1 clove garlic, crushed
  • 1/2 tsp. sugar
  • 1/8 tsp. crushed red pepper

Combine first 4 ingredients in a bowl. Combine remaining ingredients in a jar with tight-fitting lid and shake well. Pour dressing over salad and toss gently to coat. Cover and refrigerate until serving time.
