Zesty Pork Stew
Prep: 15 min, Cook: 55 min.
  • 2 lbs. boneless pork sirloin roast, cut into 1 inch cubes
  • 1-3/4 cups canned stewed tomatoes, undrained and chopped
  • 1-1/2 cups water
  • 3 cups red potatoes, peeled and cubed
  • 2 cups onion, thinly sliced
  • 2 cups carrot, thinly sliced
  • 1 tsp. crushed red pepper
  • 1 tsp. dried oregano
  • 1 tsp. cumin seeds, toasted

Combine all ingredients in a Dutch oven. Bring to a boil. Cover, reduce heat, and simmer 30 minutes. Uncover. Cook 25 minutes longer, or until vegetables are tender.
