Mediterranean Market Salad
Prep: 10 min, Cook: 10 min.
  • 1 lb. broccoli florets
  • 1 Tbs. garlic, crushed
  • 1/2 tsp. coarsely ground black pepper
  • 1 Tbs. oil
  • 1-1/2 cups water
  • 7 ounces couscous
  • 1/4 cup pitted Kalamata or black olives, cut in quarters

In large skillet over medium heat, cook broccoli, garlic, and black pepper in oil 5-6 minutes, or until crisp-tender. Add water and bring to a boil. Remove from heat. Stir in couscous. Cover. Let stand 7 minutes. Sprinkle with olives.
