Broccoli with Chili Oil

- 1 medium jalapeño pepper, with seeds and veins removed, minced
- 1 shallot or green onion, minced
- 1/3 cup vegetable oil
- 3 Tbs. water
- 1/2 tsp. sugar
- 1 tsp. salt
- 1/4 tsp. pepper
- 4 stalks broccoli, steamed
Heat the jalapeño, shallot, and oil in a small saucepan over medium heat for several minutes. Let stand for 5 to 10 minutes for flavors to meld. While the oil is still warm, stir in water, sugar, salt, and pepper. When ready to serve, spoon the flavored oil over steamed broccoli and gently toss.
