Ann Ward's Yellow Squash Surprise
Prep: 10 min, Cook: 30 min.
  • 4 slices of bacon
  • 1 large onion, cut into 1/4 inch slices
  • 3 carrots, cut into 1/4 inch rounds
  • 1 red bell pepper, seeded and sliced
  • 1/2 lb. mushrooms, fresh or canned, sliced
  • 2 lbs. yellow squash, cut into 1/2 inch rounds
  • 3-1/3 cups canned tomatoes

Cook bacon in a heavy nonstick skillet over medium high heat 5-6 minutes, turning occasionally. Add remaining ingredients, except tomatoes. Reduce heat to low and simmer 20 minutes. Add canned tomatoes and simmer another 10 minutes.
