Barbecue Pork Loin
Prep: 10 min, Marinate: 8:00, Cook: 1:00.
- 1 lb. boneless pork loin roast
- 1/2 cup beer
- 2 Tbs. plus 2 tsp. dark corn syrup
- 2 Tbs. plus 2 tsp. onion, finely chopped
- 1-3/4 Tbs. prepared mustard
- 1 Tbs. plus 1 tsp. vegetable oil
- 1-1/2 tsp. chili powder
- 1 clove garlic, crushed
Place pork in a nonreactive covered container. Combine remaining ingredients in a separate bowl. Mix thoroughly. Pour over pork. Cover and marinate in refrigerator at least 8 hours, turning pork occasionally. Prepare grill with banked coals or if using gas grill, turn heat to high on one side, low on the other. Remove pork from marinade, reserving marinade. Place pork over a drip pan on grill. (Not over coals) Cover grill and roast about 1 hour, basting frequently with marinade, until meat thermometer registers 250°F. Let rest 10 minutes before slicing.
