Apricot Chicken Balls
Prep: 20 min, Cook: 10 min, plus refrigeration time.
  • 11 ounces minced chicken
  • 1/4 cup plus 3 Tbs. packaged breadcrumbs
  • 1 egg
  • 1/4 cup plus 3 Tbs. dried apricots, finely chopped
  • 1/4 cup plus 3 Tbs. macadamias, finely chopped
  • 1 Tbs. light soy sauce
  • 2-1/2 tsp. fresh coriander, chopped

Place all ingredients in a blender or food processor and process until well combined. Roll 2 tsp. of mixture (level measure) into a ball. Make additional balls until mixture is used up. Place balls in a single layer in the top half of a steamer basket over boiling water. Cover pan and steam about 8 minutes, or until cooked through. Cool and refrigerate.
