Chicken and Asparagus Pastries
Prep: 15 min, Cook: 15 min.
  • 4 sheets ready rolled puff pastry
  • 1 cup cooked chicken, chopped
  • 1/3 cup plus 3 Tbs. fresh cooked or canned asparagus, drained and chopped
  • 2-3/4 Tbs. sour cream
  • 2-3/4 Tbs. fresh chives, chopped
  • 2 ounces cheddar cheese, finely chopped
  • 1 egg, lightly beaten

Preheat oven to 375°F. Cut each pastry sheet into 4 strips and cut each strip crossways to make 3 rectangles. Roll each rectangle on a lightly floured surface to an 3x4 inch rectangle. Combine next 5 ingredients in a bowl. Spoon 1 level teaspoon of mixture onto each pastry rectangle. Lightly brush edges with egg, fold in long sides and fold in ends. Place pastries seam side down on greased oven trays. Just before serving, brush pastries with egg, and bake about 15 minutes or until lightly browned.
