Chicken Cheese Balls
Prep: 20 min, plus refrigeration time.
  • 1 cup cooked chicken, chopped
  • 1/4 lb. cream cheese
  • 1-1/2 tsp. French mustard
  • 2-3/4 Tbs. lemon juice
  • 1 cup salted mixed nuts

Place first 4 ingredients in a blender or food processor and process until smooth. Cover and refrigerate 1 hour. Blend or process nuts until fine. Roll a level 2 tsp. of chicken mixture into a ball and roll in nuts. Repeat with remaining mixture and nuts. Cover and refrigerate 1 hour. Makes about about 7-8 balls per serving.
