Red Cabbage Coleslaw Salad
Prep: 10 min.
  • 1/2 cup plus 3 Tbs. white vinegar
  • 2-3/4 Tbs. sugar
  • 2 tsp. curry powder
  • 1 tsp. turmeric
  • 1/3 cup plus 3 Tbs. oil
  • 9 ounces red cabbage, finely shredded
  • 1/2 cup plus 3 Tbs. fresh carrots, grated
  • 1 onion, thinly sliced
  • 1 red bell pepper, seeded and thinly sliced
  • 1 green bell pepper, seeded and thinly sliced
  • 11 ounces canned black beans or red kidney beans, rinsed and drained
  • 1 cup walnuts or pecans, or almonds
  • 1 apple, chopped
  • 1/3 cup plus 3 Tbs. golden raisins or black raisins

Combine first 5 ingredients in a jar with a tight-fitting lid and shake well. Combine remaining ingredients in a large bowl. Add dressing and toss.
