Red Cabbage Coleslaw Salad

- 1/2 cup plus 3 Tbs. white vinegar
- 2-3/4 Tbs. sugar
- 2 tsp. curry powder
- 1 tsp. turmeric
- 1/3 cup plus 3 Tbs. oil
- 9 ounces red cabbage, finely shredded
- 1/2 cup plus 3 Tbs. fresh carrots, grated
- 1 onion, thinly sliced
- 1 red bell pepper, seeded and thinly sliced
- 1 green bell pepper, seeded and thinly sliced
- 11 ounces canned black beans or red kidney beans, rinsed and drained
- 1 cup walnuts or pecans, or almonds
- 1 apple, chopped
- 1/3 cup plus 3 Tbs. golden raisins or black raisins
Combine first 5 ingredients in a jar with a tight-fitting lid and shake well. Combine remaining ingredients in a large bowl. Add dressing and toss.
