Quick Broccoli and Pork Pie
Prep: 10 min, Cook: 10 min.
  • 1 Tbs. olive oil
  • 1 small onion, chopped
  • 1 lb. ground pork
  • 1 clove garlic, crushed
  • 10 ounces frozen chopped broccoli, thawed
  • 4 eggs
  • 1/2 tsp. oregano
  • 1/4 tsp. crushed red pepper
  • 1/4 cup shredded cheddar cheese

Heat oil in a heavy nonstick skillet over medium high heat. Sauté onion about 3 minutes, stirring often, until lightly browned. Add ground pork and garlic. Cook about 5 minutes, stirring often to break up lumps of meat, until pork is browned. Drain off all but 1 Tbs. pan drippings. Add broccoli and cook 1 minute, stirring often. Reduce heat to medium. Combine eggs, oregano, pepper and salt to taste in a bowl. Pour into skillet and cook about 1 minute, stirring often, until eggs are set. Serve sprinkled with cheese.
