Beans with Minty Yogurt Dressing
Prep: 10 min, Cook: 10 min, plus refrigeration time.
- 1 lb. green beans, cut into 2 inch lengths
- 1 medium red pepper, sliced
- 2 cloves garlic, crushed
- 1/4 cup oil
- 1 Tbs. plus 1 tsp. white vinegar
- 4 green shallots, chopped
- 1/3 cup nonfat plain yogurt
- 2-3/4 Tbs. fresh mint, chopped
- 1/3 cup sour cream
- 1/2 tsp. paprika
- 1/2 tsp. lime zest
- 2 tsp. lime juice
- 2 tsp. honey
Place green beans and red pepper in a steamer basket over boiling water. Cover pan and steam 10 minutes, or until tender. Drain and cool. Combine garlic, oil, vinegar, and shallots in a bowl. Add green beans and red peppers. Refrigerate several hours. In a separate bowl, create a dressing by thoroughly combining next 7 ingredients. Serve drizzled over the green bean mixture.
