Bananas with Peanut Caramel Cream

- 3 ounces unsalted butter
- 1/2 cup plus 3 Tbs. brown sugar, firmly packed
- 1 cup sweetened condensed milk
- 2-3/4 Tbs. sour cream
- 3-3/4 Tbs. thickened cream
- 2-3/4 Tbs. smooth peanut butter
- 4 medium bananas, thinly sliced
- 1-3/4 Tbs. lime juice
- 2/3 cup whipped cream (optional)
Melt butter in a saucepan over medium heat. Stir in sugar and milk, and continue stirring, without boiling, until sugar is dissolved. Raise heat to high and stir 5 minutes, or until mixture is golden brown. Remove from heat and allow bubbles to subside. Gradually stir in creams and peanut butter; cool. Refrigerate before using. Combine bananas with lime juice in a medium bowl. Divide mixture between 4 glasses (1 cup capacity). To serve, spoon peanut caramel cream over bananas and top with a dollop of whipped cream, if desired.
