Creamy Potato
Prep: 10 min, Cook: 10 min.
  • 1-1/4 lbs. medium potatoes, peeled and chopped
  • 1 ounce unsalted butter
  • 1/4 cup cream
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper
  • 1 Tbs. plus 1 tsp. fresh herbs, chopped

Place potatoes in a steamer basket over boiling water. Cover pan and steam 10 minutes or until tender. Drain and mash. Add butter and cream. Season with salt and pepper. Stir until smooth and creamy. Sprinkle with chopped fresh herbs. Serve hot.
