Basic Mashed Potato
Prep: 10 min, Cook: 10 min.
  • 4 medium baking potatoes, peeled, each cut into 4 even pieces
  • 1 ounce unsalted butter
  • 1/4 cup milk
  • 1 tsp. sugar

Place potatoes in a steamer basket over boiling water. Cover pan and steam 10 minutes or until tender. Drain. Mash well with potato masher or fork, or push potato through a sieve. Add last 3 ingredients and beat until butter is melted.
