Basic Potato Gratin
Prep: 15 min, Cook: 2:30, plus cooling time.
  • 1 garlic bulb
  • 5 large potatoes, peeled and cut into 1/8 inch slices
  • 7 ounces Gruyère or Swiss cheese, grated
  • 1-1/4 cups cream
  • 1/4 tsp. ground nutmeg

Preheat oven to 375°F. Grease 1 9x9 inch square cake pan. Place garlic on oven tray. Bake about 50 minutes, or until garlic is very soft. Cool 10 minutes. Cut in half, squeeze out garlic and mash. Layer potatoes in prepared pan, sprinkling with 2/3 of the cheese between layers. Combine cream, garlic, and nutmeg in a small bowl. Pour mixture over potatoes and top with remaining cheese. Bake, uncovered, for about 1-1/2 hours, or until potatoes are tender and top is well browned. Every 30 minutes, press potatoes down into cream mixture with an egg slice.
