Quick Coleslaw
Prep: 10 min, plus chilling time.
  • 1 lb. green cabbage, finely shredded
  • 1-1/3 cups fresh carrots, grated
  • 1 stick celery, finely chopped
  • 1 onion, finely chopped
  • 1 small green or red bell pepper, finely chopped
  • 1/3 cup plus 3 Tbs. prepared coleslaw dressing
  • 1/4 cup fresh mixed herbs, chopped, optional

Combine first 6 ingredients in a large bowl. Toss well. Add mixed herbs, if desired. Chill before serving.
