Quick Onion Salsa

- 1 large red onion, peeled and finely sliced
- 2-3/4 Tbs. lime juice
- 1 Tbs. plus 1 tsp. olive oil
- 1 tsp. brown sugar
- 1 Tbs. plus 1 tsp. fresh coriander, chopped
- 1 tomato, chopped
- 1 jalapeño chilli, finely chopped
Combine all ingredients in a bowl. Mix well. Season to taste. Cover and set aside at room temperature 10 minutes before serving.
