Apple Raisin Chicken Pastries
Prep: 15 min, Cook: 15 min.
  • 1 apple, grated
  • 1 carrots, grated
  • 2 cups cooked chicken, chopped
  • 1/3 cup plus 3 Tbs. cottage cheese
  • 1/3 cup plus 3 Tbs. raisins, or sultanas
  • 1/4 tsp. ground cinnamon
  • 8 pastry puffs
  • 3 ounces unsalted butter, melted

Preheat oven to 375°F. Squeeze excess liquid from apple and carrot. Combine next 4 ingredients in a bowl with grated apple and carrot. Mix well and divide mixture into 4 equal portions. Place 2 sheets of pastry together. Fold pastry in half and brush with butter. Place one portion of the chicken mixture in centre of pastry. Fold in sides and fold over to form a square parcel. Repeat process with remaining ingredients. Arrange pastries on a greased oven tray. Brush parcels with butter and bake 15 minutes or until well browned and heated through.
