Chicken Patties with Mustard Cream
Prep: 15 min, Cook: 10 min, plus refrigeration time.
  • 1 lb. minced chicken
  • 2/3 cup plus 2 Tbs. stale breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 2 tsp. fresh thyme leaves, chopped
  • 1/8 tsp. hot red pepper sauce
  • 1 egg, lightly beaten
  • 1/2 cup plus 3 Tbs. sour cream
  • 1 Tbs. plus 1 tsp. seeded mustard
  • 2-3/4 Tbs. fresh chives, chopped

Combine first 6 ingredients in a bowl, mix well. Shape mixture into 1 patty per serving. Place patties in a shallow pan. Cover and refrigerate 1 hour. Preheat oven to 400°F. Cook patties in pan 8-10 minutes or until cooked through. Meanwhile, mix remaining ingredients in a bowl and serve with patties.
