Potato Casserole Americana
Prep: 15 min, Cook: 45 min.
  • 1-1/2 lbs. potatoes, cut into 1/2 inch pieces
  • 1/4 lb. light cream cheese
  • 1/2 cup nonfat plain yogurt
  • 1 clove garlic, crushed
  • 1/4 tsp. salt (optional)
  • 1 Tbs. unsalted butter, melted
  • 1/4 tsp. paprika

Preheat oven to 350°F. Place potatoes in a steamer basket over boiling water. Cover saucepan and steam 12-15 minutes until potatoes are very tender. Drain and return potatoes to pan. Add next 4 ingredients. Beat 2 minutes with an electric mixer at medium speed or until mixture is smooth. Transfer potato mixture to a lightly oiled baking dish. Drizzle with butter, sprinkle with paprika and bake 25-30 minutes.
